Golden Beet Salad

I’ve been ignoring my blog for way too long – and I knew I had to post something very good to make up for a long pause. This salad is it! Super easy, flavorful and looks so good! Love the cheerful spring colors.

I spotted this salad at Whole Foods and it looked so cheerful and appetizing that I had to buy some for lunch and oh how good it was! Sweet beets with red onions in white balsamic dressing. It was so different that I simply had to recreate this at home! And this was my first time to make anything with golden beets, I had no idea they even existed 🙂 You can get them at Whole Foods. Apparently! This salad tastes even better the next day as it gets marinated, even a few hours in the fridge will do. Also, you can boil the beets in advance and keep them in the fridge.

Ingredients (for 4 servings)

4 medium golden beets

1 medium red onion

3-4 tablespoons olive oil

1-2 tablespoons white balsamic or orange vinegar

Fresh lemon juice to taste (about 1 tablespoon)

Salt

Pepper

Fresh cilantro leaves (you can substitute for parsley)

1. Wash the beets and boil unpeeled until soft, about 1 hour. Discard the water and let them cool.

2. Peel and slice the onion into thin slices, sprinkle with some olive oil and vinegar or lemon juice and let it marinate for about 15 minutes.

3. Peel the beets and chop into medium chunks, add onion slices, add vinegar, lemon juice and olive oil, season with salt and pepper and mix thoroughly. Garnish with cilantro leaves and let it marinate for at least 30 minutes in the fridge before serving. Enjoy!

    1. Hi Raymund! Me neither! I was very intrigued when I saw this salad at WF and then looked for the actual beets. They are slightly sweeter than red beets and the taste is more delicate, otherwise it’s very similar. They don’t look very appealing raw, but once you boil and peel them, you’ll find a gorgeous yellow vegetable 🙂

  3. Golden beats, I like the idea. Love beats but hate the stains. BTW I tried potato latkes and I am telling ya that is gonna be my brunch special for long long time.

      By the way – this is the best thing about golden beets – NO STAINS! I hate that too about red beets.
