This is a healthy simple side full of flavor! You can make pesto in advance and vary the ingredients – try adding different fresh herbs, almonds instead of pine nuts, you get the idea. I’m planning to try this with some mint next time!
Ingredients (for 4 servings)
2 cup brown rice
2 tablespoons sun-dried tomatoes
Handful of fresh basil leaves
2 garlic cloves, peeled
1 tablespoon pine nuts
2 tablespoons olive oil
Juice of 1/2 lime
Handful of fresh arugula leaves
4 cups water
1. Make the pesto. Blend all the above ingredients except water, lime and rice (obviously together in a food processor.
2. Bring rice and water to boil; cook on low for about 15 minutes. Add salt and half of the pesto. Cook for another 15 minutes, adding some more water if needed. Add the rest of the pesto and lime juice, cook for another 5-10 minutes until the rice is completely soft and enjoy!
