Ingredients (for 4 servings)
About 1.5 lb. Pork tenderloin
1 lb fresh figs, halved
1 large red onion, peeled and sliced
1 tablespoon honey
1 teaspoon brown sugar
2 tbs. vegetable oil
Some fresh lemon juice (about 1 tablespoon)
1. Heat vegetable oil in a skillet, add onion and cook on medium, stirring until golden, add brown sugar and cook for another few minutes until soft.
2. Cut pork into small apprx. 1-inch pieces. Add to the onion, season with salt and pepper and cook for 10-15 minutes on low heat, stirring occasionally. When the meat is completely cooked, add honey, figs and lemon juice; cook for another few minutes and serve!
