Ingredients (for 2 servings)
About 1/4 watermelon (COLD!)
Handful of cherry tomatoes, halved
Pinch of cayenne pepper
About 1-2 tsp balsamic vinegar
Few fresh basil leaves, chopped
Spring salad mix
Remove watermelon’s skin and chop into large cubes. Arrange spring salad mix in a bowl, add tomatoes and watermelon chunks, season with salt and cayenne pepper and sprinkle with balsamic vinegar to taste. Enjoy immediately and stay cool!
