I love Sunday breakfasts and French toast is my new obsession. So good and sweet with fresh fruit and maple syrup! Adding banana to eggs makes this really different.
Ingredients (for 2 servings)
2 slices thick white bread (Texas toast is the best)
1/4 cup 2% milk
1 tablespoon vanilla extract
2 tablespoons unsalted butter
1 ripe banana, peeled and pureed
1 tablespoon honey
Fresh fruit and berries for serving
1. Reheat the oven to 450F. In a large bowl, whisk eggs, add milk, honey, banana, vanilla extract and mix thoroughly.Transfer the mixture into a pie pan, dip bread into the mixture and let it sit there for a few minutes until bread soaks all the egg mixture.
2. In the meantime, heat the oven-proof skillet with butter until it starts bubbling. Very carefully, transfer the bread into the skillet and cook in the oven for 4-5 minutes until one brown on one side, turn and cook for another 4-5 minutes. Serve immediately with fresh fruit, berries and maple syrup.
