Adapted from Food and Wine’s Smoked Paprika-Rubbed Steaks with Valdeón Butter
Ingredients (for 2 servings)
2 steaks (I had 2 pieces of filet mignon, about 7 oz. each)
2 garlic cloves, peeled and chopped
1 tablespoons Spanish smoked paprika
Pinch of cayenne ( I used crushed red chili pepper)
Pinch of dried oregano
2 tablespoons softened butter
Few spring of green onion, finely chopped
1/5 cup olive oil
2 oz. creamy blue cheese
Freshly ground black pepper
- Make the marinade. Stir the garlic, paprika, cayenne and oregano; gradually stir in the olive oil. Add some salt and black pepper. Wash the steaks and pet dry them with a paper towel and transfer to a large bowl. Add the marinade and rub the steaks well with it. Cover and refrigerate for a few hours or overnight.
- Make the blue cheese butter. In a small bowl, mash the butter with the green onion. Stir in the blue cheese. Scrape the blue cheese butter and transfer to a small tupperware container or a ramekin. Cover and refrigerate for at lease 30 minutes.
- If you don’t have a grill, broil the steaks in a pre-heated oven for about 5 minutes on each side. Let the meat rest for 10 minutes and serve at once with the blue cheese butter on top. Amazing!!
