Smoked Salmon and Crème Fraiche Omelette

I love very simple yet sophisticated Gordon Ramsay’s recipes. This omelette is a perfect  Sunday breakfast/brunch. I love the combination of smoked salmon, creme fraiche and chives. Delicious and so easy to make!

Adapted from Gordon Ramsay Makes it Easy

Ingredients (for 2 servings)

5-6 extra large eggs

1 tablespoon butter

4 oz. smoked salmon (cut into small pieces)

2 tablespoons creme fraiche (don’t substitute for sour cream)

Bunch of chives (or green onions)

Salt

Black pepper

  1. Heat the broiler to high. Break the eggs into a bowl, whisk and season with salt and pepper.

  2. Heat the butter in an oven-proof skillet and pour in the egg mixture. Leave until the eggs start to set (for about 30 seconds), then draw the edge of the mixture toward the center of the skillet using a spatula. Cook for about 1-2 minutes until the base is set.

  1. Put the skillet under the broiler for about 3-4 minutes, until the omelette is set on top but not too dry. Remove from the heat.

  2. Cut the omelette into wedges and transfer to the serving plates. Sprinkled with the smoked salmon on top and dot with creme fraiche. Sprinkle with the chopped chives and serve. Enjoy!
