Very easy and light vegetable dish full of flavor! You can serve it warm as a side to fish or meat. It’s delicious cold served with just some warm bread as an appetizer.

Ingredients (for about 4 servings)
2 zucchini, chopped
1 onion, chopped
2 eggplants, chopped
2 bell peppers (chose different-colored peppers) seeded and chopped
2 medium tomatoes chopped or about 8 oz. cherry tomatoes, halved
3 garlic cloves, peeled and chopped
Bunch of fresh basil leaves, finely chopped
3 tablespoons balsamic vinegar
Heat the olive oil in a saucepan or Dutch oven over medium heat. Add the garlic and onion and cook, stirring often, for about 2 minutes. Add the peppers and tomatoes, stir and cook for another 5 minutes. Add the zucchini, stir well, cook for another 2-3 minutes and add eggplant. Drizzle with balsamic vinegar and stir well. Cook for about 8-10 minutes (until all the vegetables are soft), stirring occasionally. Add the chopped basil season with salt and pepper to taste, stir and serve!
