I love Caprese salad and recently came up with this Caprese-inspired omelette. It’s a perfect breakfast – quick, easy and delicious!
Ingredients (for 2 servings)
1 fresh mozzarella ball (about 4 oz)
2 medium tomatoes on the vine
4 extra large eggs
1/4 cup whole or 2% milk
2 tablespoons canola oil
1. Whisk the eggs until the mixture is smooth, add milk, salt and pepper to taste and whisk a bit more. Slice mozzarella and tomatoes.
2. Heat the skillet on high with canola oil. Pour the egg mixture into the skillet. Place tomato slices on top and cover them with mozzarella slices. Garnish with extra tomato pieces.
3. Put the skillet into a preheated oven and broil for 10-12 minutes (until it gets slightly golden on top). Serve immediately with fresh basil and slices of prosciutto.
