Mushroom, Avocado and Tomato Salad

Ingredients

7 fresh mini button mushrooms

4 small tomatoes on the vine

1/2 avocado

1/2 bag of baby arugula

Salt

Pepper

2 tablespoons extra virgin olive oil

1 tablespoon lemon juice

Wash arugula. Cut mushroom and tomatoes in four. Slice avocado. Put vegetables on top of arugula in a salad bowl. Sprinkle with salt and pepper and drizzle with lemon juice and olive oil. Toss salad and serve immediately.
