Rosemary Chicken

I usually find chicken breast plain and very difficult to cook – it gets dry so quickly. But this recipe is a great way to make it juicy and flavorful.  I guess anything can taste good with butter!

Ingredients (for 2 servings)

2 tablespoons butter

2 tablespoons vegetable oil

3 boneless skinless chicken breasts

2 springs fresh rosemary finely chopped (or some dried rosemary)

Flour spread on a plate

1 tablespoon lemon juice



1. Cut chicken into about 1 1/2 inch pieces, sprinkle with salt, pepper and rosemary.

2. Heat butter and vegetable oil in a large skillet. While it’s heating, turn chicken pieces in the flour.  Put chicken in the skillet and cook on medium for 10-12 minutes, turning pieces about every 2 minutes to ensure the meat cooks evenly. Drizzle with  lemon juice and serve!
