Avocado and Tomato Salad

I love salads. A perfect meal for me  has to include a fresh salad or at least some vegetables. I don’t have the luxury of having  salads with my lunches at work (and having JUST a salad is definitely not enough for me), so I always try make one for dinner! I love green salad mixes and always try to jazz them up with some tomatoes, bell peppers, cucumbers, avocados, etc.

Dressing is what makes your salad good. I recommend making a homemade dressing whenever possible, it is very easy and it will make a huge difference even if you just mix balsamic vinegar with olive oil.

Ingredients (for four servings)

1 ripe avocado

1 bag  your favorite salad mix

2  tomatoes on the vine

For honey mustard dressing:

1 tablespoon lemon juice

1 teaspoon honey

1 teaspoon  whole grain mustard

1-1.5 tablespoon extra virgin olive oil



First, make the dressing by mixing lemon juice, mustard, olive oil and honey.

Wash salad mix. Although it may say on the bag that the mix is triple washed, you should always wash the mix to avoid having dirt or bacteria on your plate.  Slice peeled avocado and tomatoes, place on top of salad mix, add salt and pepper to taste. Add dressing, toss and serve at once. Please note that you should add your dressing right before serving the salad. If you toss the salad with dressing in advance, it will get very mushy and unappetizing. This salad can be enjoyed by itself with some bread, or served with any main course. Enjoy!
